A history of tradition, craftsmanship…
mamma emma was born in 2013 from Master Srl, founded in 1992. Master’s owners, Adriano Bianco and Giovanni Favretto, have always combined their engineering knowledge with their love of good food. This union, gave birth to the concept of industrial craftsmanship. By designing the necessary machinery themselves, thanks to their technical training, the two partners were able to create a production process that follows every step of the traditional recipe.
The results? Today mamma emma is proud to export the originality of Italian gnocchi to more than 15 countries on 5 continents.

Tied to the memories and quality of food of yesteryear, we are always looking to the future to bring many tasty novelties to the table, as our continuous progress shows:
- We are always creating and testing new products thanks to a quality control laboratory that effects more than 500 tests per year on incoming raw materials, packaging, and finished products
- We have a cook who works closely with the R&D department to create new products and new recipes
- Our warehouse is fully automated, with a robot making up the pallets
- Our production lines are always updated with the latest technology.

Choosing raw material
Our experience has led us to select only particular varieties of potatoes, ideal for producing gnocchi of superior quality and consistency.
Our numbers
We process 15,000 kilograms of fresh potatoes every day, which we then: wash, sort, steam with the skin on to keep the organoleptic properties intact, peel and squeeze one by one

Attention to quality is expressed at all times: from continuous dialogue with suppliers, finally to the acquisition of internationally recognized certifications such as: FSSC 22000, BRCGS, IFS and ICEA.
A key milestone in quality management has been achieved by perfecting technologies, continually training specialized personnel and searching for innovative solutions to improve production processes.
Our products undergo a pasteurization process that avoids microbiological contamination and makes pasteurization that avoids microbiological contamination and makes the use of preservatives unnecessary.

‘s commitment to the environment
Our commitment to sustainability is concrete:
- 100% Green Energy: we use only energy from renewable sources such as wind, photovoltaic, solar thermal, geothermal, hydroelectric, and even that produced using tides and wave motion, biogass, and biomass. Thanks to this choice, from 2014 to 2022 we have avoided the emission of 10,000 tons of CO2 into the atmosphere
- Photovoltaic system: which came on line in 2013 has enabled us to save about 5% of total electricity with a theoretical lower carbon dioxide emission of 54 tons per year
- The activity to reduce environmental impact: we prefer to use, whenever possible, FSC paper and paperboard from renewable forests and produced without chlorine.
- We transfer industrial refits (processing waste) to other manufacturing entities.

The idea of Adriano and John, who started with 6 employees in a small workshop,
